EASY Peanut Butter & Banana Puppy Cupcakes

17 March 2017

So, my puppy turned one yesterday! Unfortunately, I am having a really busy time at the minute so haven't been able to throw the full scale puppy party that I really wanted to, however I did make sure to find the time to grab his two doggy loves (my sister's dogs Casper and Luna) and get a few new toys and bake some cake!

By the time I had driven home from work and got to my Mamma and Pappa's (where Benny was), I was pretty damn tired, so whilst I did follow the recipe, I also tended to guess amounts because I figured if he eats fox poo, my cake should go down pretty well.

Ingredients;
¾ cup whole wheat flour
¼ cup old-fashioned oats
1 tsp baking powder
½ cup creamy peanut butter (I use natural, unsalted)
½ cup mashed banana
2 eggs
½ cup water

The recipe I *kind of* followed was;

Pre-heat oven to gas mark 4.
Lightly butter a muffin tin. (Oh, I also completely forgot to do this)
In a bowl or mixer, whisk together whole wheat flour, old-fashioned oats, and baking powder.
Cream together peanut butter and mashed banana and the eggs.
Mix in flour mixture and the water until it all combines.
Split between the 12 segments of the muffin tin.
Bake for 8-10 minutes, until a toothpick (or knife) comes out clean. (Or again, just wait until they brown and slightly guess a bit).
Let the pupcakes (wheyy) cool for a few minutes before transfering them somewhere (preferably some form of wire rack) to cool completely.

For the icing, I dolloped a bit of creme cheese and stuck Benny's favourite milky bone in there!

And voila! Pupcakes are ready to be demolished! x
